Title: Sun-Dried Tomato Burgers

Yield: 4 servings
1/2 c Sour cream
2 ts Lemon juice
1 cl Garlic; minced
1/4 ts Dried oregano
1/4 ts Pepper

1/4 c Oil-packed sun-dried
- tomatoes; chopped
1/4 c Sun-dried tomato pesto
1 tb Greek seasoning
1 lb Lean ground turkey or beef
1/4 c Crumbled feta cheese
4 Whole wheat hamburger buns;
- split
1/4 c Chopped water-packed
- artichoke hearts
1/4 c Julienned roasted red
- peppers
In a small bowl, mix the first five ingredients.
Refrigerate until serving.
In a large bowl, combine tomatoes, pesto and Greek
seasoning. Add meat and cheese; mix lightly but
thoroughly. Shape into four 1/2" thick patties.
On a greased grill rack, grill burgers, covered, over
medium heat, or broil 4" from heat, 4-6 minutes on
each side.
Serve on buns with sour cream mixture, artichoke hearts
and peppers.
