    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Vida Verdelho Crab Ceviche
    Categories: Seafood, Vegetables, Chilies, Citrus, Herbs
    Yield: 2 servings

    1/2 md Sweet red onion
    3 Plum tomatoes
    2 JalapeƱos
    3 oz Fresh corn niblets
    2 ts Agave nectar
    2 Oranges; zested, juiced
    2 Limes; zested, juiced
    1/2 Bell pepper
    1/2 Yellow bell pepper
    Handful cilantro
    Extra virgin olive oil
    1 lb Fresh crab

    Finely chop all vegetables.

    Mix all ingredients (except crab) in a large bowl.

    Gently fold in crab.

    Let stand for two to six hours to allow flavors to meld.

    Serve with tortilla chips or on an appetizer spoon.

    Arrrrghhhh --- the dreaded fat finger strikes again. Then moves on.

    To bring this back on topic I will note that the city fathers have
    begun the final phase of "railroad relocation" here, in Springfield,
    Illinois.

    The new line(s) which wil run (more-or-less) North-South will have
    viaducts or overpasses on all major East-West streets. And a central transportation hub near the downtown area for trains, intercity buses (Grayhound and such) as well as city/country bus service.
