Easy Cooking When You Can't Eat Out:
Breakfast Bacon Loaf with Ricotta and Bacon
This is great breakfast loaf.
2 cups flour
7 ounces warm milk
1 teaspoon sugar
2 teaspoons yeast
2 cups flour
2 cups ricotta cheese
2 cups uncooked bacon, cut in 1" pieces
1/2 cup walnuts, chopped
3/4 cup butter, melted
1 teaspoon salt
1 small bunch fresh thyme
Put the two cups of flour in a mixing bowl. Make a well in
the center of the flour and add the yeast. Add the sugar and
milk. Stir the milk and yeast well, then incorporate the
flour into the mix. Cover and let rise for about an hour.
Punch the dough down and then add the flour, the ricotta, bacon
pieces, walnuts, butter, salt and fresh thyme. Knead throughly.
Gather the dough into a ball, and flatten it and shape it into a
ring shape. Place on a greased sheet. Cover the dough ring and
let it proof for another 20 minutes. Bake in a preheated 350F
oven for about 50 minutes, or until the ring is golden and
sounds hollow when tapped.
