3 c Zucchini; cut in 1" chunks
2 sl Bacon; crisp & crumbled
- (optional)
1 sm Onion; chopped
5 1/4 oz Condensed consomme (2/3 c)
- (1/2 can)
1 1/3 c Water
1 cl Garlic
1/2 ts Basil
2 tb Parsley; chopped
1/2 ts Seasoning salt
1/2 ts Salt
1/8 ts Pepper
Parmesan cheese; grated
Pour off all fat & simmer all ingredients except cheese until tender.
Cool slightly. Blend half of recipe at a time in blender. Heat before
serving & top with Parmesan cheese.
