    Title: Flavorful Chicken Fried Rice
    Categories: Vegetables, Poultry, Rice, Herbs
    Yield: 6 servings

    3 tb Oil; divided
    2 lg Eggs; lightly beaten
    1/2 md Onion; chopped
    12 oz Pkg frozen peas & carrots
    1 1/2 c Diced, cooked chicken
    3 cl Garlic; minced
    2 ts Sesame oil
    3 c Cooked long grain rice
    2 tb Soy sauce
    1/2 ts Salt
    1/4 ts Pepper
    1/4 ts Ground ginger
    3 Green onions; chopped

    In a large skillet or wok, heat 1 tablespoon oil over
    medium heat. Add beaten eggs; cook and stir until
    thickened and no liquid egg remains. Remove from pan;
    set aside.

    To the same skillet, add remaining 2 tablespoons oil.
    Add onion and frozen peas and carrots; cook until
    tender, 4-5 minutes. Stir in chicken and garlic; cook
    2-3 minutes longer. Remove from pan; set aside.

    Add sesame oil and rice to skillet; cook until rice
    begins to brown, 10-12 minutes. Stir in eggs, chicken
    and vegetable mixture, soy sauce, salt, pepper and
    ginger; cook until heated through, 2-3 minutes. Serve in
    bowls with chopped green onion.

    Title: Cool Whip Cookies
    Categories: Five, Chocolate, Dairy
    Yield: 24 servings

    15 1/4 oz Box chocolate cake mix
    8 oz Tub whipped topping; thawed
    1 lg Egg; room temp
    1/2 c Confectioners' sugar

    In a large bowl, beat cake mix, whipped topping and egg
    at medium speed until incorporated. Cover; chill 30
    minutes.

    Set oven @ 350ºF/175ºC.

    Place confectioners' sugar in a shallow dish. Shape
    level tablespoons of dough into balls; roll each in
    confectioners' sugar until completely coated. Place
    2-in. apart on parchment-lined baking sheets.

    Bake until edges are just set, 11-13 minutes. Cool on
    pans 5 minutes. Remove to wire racks to cool completely.
