Title: Smoked Sausage Dinner

Yield: 2 servings
1/2 lb Smoked sausage; sliced
1/3 c Chopped bell pepper
1/4 c Chopped onion
1/2 ts Dried oregano
1/2 ts Dried basil
1 tb Olive oil
1 cl Garlic; minced
3/4 c V8 juice
1 1/2 c Hot cooked rice
Minced fresh oregano; opt
In a large skillet, saute the sausage, green pepper,
onion, oregano and basil in oil until vegetables are
crisp-tender. Add garlic; cook 1 minute longer.
Stir in V8 juice; bring to a boil. Reduce heat; simmer,
uncovered, until thickened and heated through, 7-8
minutes, stirring occasionally. Serve with rice. If
desired, garnish with fresh oregano.
