Yield: 1 Batch
1 c Cooked roast; shredded
Oil; to fry
1/2 Onion; chopped
6 Eggs
1 cl Garlic; crushed
1/2 ts Salt; or to taste
1/4 ts Ground pepper
In a large heavy skillet heat oil on low heat; add shredded roast and
fry until almost dry--stirring often. Stir in onion, garlic, salt, and
pepper--cook and stir until onion is clear. In another skillet
scramble the eggs, season to taste--add to the meat. Stir until all
the meat is coated and the eggs have set. Good serve with hot sauce
and hot corn tortillas; or can be rolled in the tortillas--also good
with frijoles.
