    Title: Sunshine Chicken
    Categories: Poultry, Curry, Rice, Herbs, Citrus
    Yield: 6 Servings

    2 ts Curry powder
    1 1/4 ts Salt; divided
    1/4 ts Pepper
    6 (5 oz ea) boned, skinned
    - chicken breast halves
    1 1/2 c Orange juice
    1 c Uncooked long grain rice
    3/4 c Water
    1 tb Brown sugar
    1 ts Ground mustard
    Chopped fresh parsley

    Combine curry powder, 1/2 teaspoon salt and the pepper;
    rub over both sides of chicken. In a skillet, combine
    orange juice, rice, water, brown sugar, mustard and
    remaining salt. Add chicken pieces; bring to a boil.
    Reduce heat; cover and simmer until chicken juices run
    clear, 20-25 minutes.

    Remove from the heat and let stand, covered, until all
    liquid is absorbed, about 5 minutes. Sprinkle with
    parsley.

    Title: Aperol Spritz Cookies
    Categories: Cookies, Snacks, Cirrus, Booze
    Yield: 3333 servings

    1/2 c Unsalted butter, softened
    3/4 c Confectioners' sugar
    1/4 ts Salt
    1 lg Egg; room temp
    1/2 ts Orange extract
    1 ts Grated orange zest
    1 3/4 c A-P flour

    MMMMM---------------------------GLAZE--------------------------------
    2 c Confectioners' sugar
    1/4 c Aperol
    1 tb Grated orange zest
    Sprinkles; opt

    Set oven @ 375ºF/190ºC.

    In a large bowl, cream butter, confectioners' sugar and
    salt until light and fluffy, 3-4 minutes. Beat in egg,
    orange extract and orange zest until smooth, 1-2
    minutes. Beat in flour until incorporated.

    Using a cookie press fitted with a shaped disc, form
    cookies. Place on ungreased baking sheets 2 in. apart.
    Bake 7-8 minutes or until just set. Let cool on baking
    sheet for 5 minutes before removing to wire racks to
    cool completely.

    In a small bowl, whisk together confectioners’ sugar,
    Aperol and orange zest. Dip the top of each cooled
    cookie into the glaze. Top with sprinkles, if desired.
    Let sit 10 minutes or until glaze is set.
