    4 sl Bacon; chopped
    1 sm Onion; chopped
    2 cl Garlic; chopped
    3 lb Little Neck clams; scrubbed
    -well
    1 c Beer, water, or chicken
    -stock

    Title: Fried Oysters Wrapped in Bacon
    Categories: Seafood, Appetisers, Pork
    Yield: 12 Servings

    12 lg Fresh, shucked oysters
    1/4 c Oyster liquor
    1 Bay leaf
    1 ts Worcestershire sauce
    4 sl (1/2 oz. ea) streaky bacon
    1/2 c Unbleached white flour
    2 lg Eggs; beaten
    1 c Bread crumbs
    2 c Oil (for frying)
    12 Toothpicks

    In a 1 quart saucepan, on a medium flame, poach oysters
    in oyster liquor with bay leaf and Worcestershire (about
    2 minutes, until the edges of the oysters curl).

    Remove oysters from liquor and set aside. Discard liquor.

    Cut bacon strips in thirds. Wrap each oyster with bacon
    and fasten with a toothpick. Roll in flour, dip in eggs,
    and then roll in bread crumbs.

    Heat oil in a 9" skillet. When oil smokes, reduce heat
    and fry oysters for 5 minutes.

    Drain on paper bag and serve immediately.

    Yields 12 oysters.

    Thanks! It's fun to get feedback.

    Tomorrow i plan to cook another batch of red beans & rice in the crockpot
    using your recipe.

    Due to dental work i've been making pudding, smoothies, and soup lately.
    Split pea soup, lentil soup, etc. I'll let the red beans & rice cook
    long so they get nice and soft.
