Title: Gooseberry Fool

450 g Gooseberries (no need to
-top and tail)
175 g Sugar
3 Elderflower heads -OR-
2 tb Elderflow cordial
275 ml Double or whipping cream
In my opinion, the best thing you can do with fresh gooseberries.
Rinse the gooseberries. Add to a pan with the sugar and elderflower.
Simmer gently until soft.
Remove from the heat and allow to cool.
Whip the cream to soft-peak stage.
Remove the elderflower heads (if using) and crush the gooseberries.
Fold in the whipped cream.
Decant into serving containers and chill in the fridge.
