If humans were as important to the Vorlon’s plans as the Minbari were, why didn’t they step in and stop the Earth-Minbari war before it escalated? A few Vorlon ships around Jericho 6 might have dissuaded the Minbari from retaliating, given cooler heads time to prevail and learn the truth?

This was one of the points of discussion in the graphic novel "Valen's name". Valen's last records in babylon 4 have him telling that he brainstormed this with Kosh and Ulkesh about whether it could be possible to avoid Earth-Minbari war, but they all came to same conclusion: if the war isn't allowed to progress as it did, consequences for the whole timeline could be dangerously unpredictable.
If Minbari do not survive the penultimate shadow war, then that basically gives the shadows free hands to move as they see fit. Delenn's estimation were that they'd emerge three times as big as fleet as they had now.
And that's just for starters. Now that nobody is there among the younger races to bang the alarm bells, the shadow infiltration with all the younger races can proceed without a hitch. There's a good chance that entire galaxy would turn into a war-torn hellscape, where extinction events are daily occurrence.
