Title: Veggie Wraps

2 lg Flour tortillas (10")
- (25 cm)
1/2 c Hummus (120 g)
1 c Baby spinach (30 g)
1 c Red cabbage (80 g);
- finely shredded
1 md Carrot (80 g);
- finely julienned
1 sm Cucumber (100 g); deseeded,
- cut into thin matchsticks
1/2 lg Red bell pepper (75 g);
- thinly sliced
1 lg Avocado (200 g); sliced
1 tb Lime juice (15 ml)
1/4 ts Salt (1.5 g)
1/4 ts Black pepper (1 g)
1/4 c Peanut sauce (60 ml)
2 tb Fresh cilantro leaves (8 g)
Preparation time: 20 minutes
Ready in just 20 minutes, these no-cook veggie wraps are packed with
creamy hummus and avocado, crisp veggies, bright lime, and a drizzle
of peanut sauce. They're quick, easy, and anything but boring.
In a small bowl, gently toss the sliced avocado with the lime juice,
salt, and black pepper.
Warm the tortillas slightly in a dry skillet or microwave until soft
and flexible.
Lay the tortillas on a flat surface. Spread the hummus evenly over the
center of each tortilla, leaving a small border around the edges.
Divide the spinach, red cabbage, carrot, cucumber, red bell pepper,
avocado, and cilantro evenly between the tortillas, layering
everything across the center.
Drizzle the peanut sauce over the vegetables.
Fold the sides of the tortillas inward, then tightly roll each wrap
from the bottom up.
Place the wraps seam-side down for 1 to 2 minutes before slicing in
half and serving.
