Title: Cast-Iron Chocolate Chip Banana Bread

1/4 c Butter; softened
1 c Sugar
1 lg Egg; room temp
1 1/4 c Mashed ripe bananas
1 ts Vanilla extract
2 c A-P flour
1 ts Baking soda
1/2 ts Salt
1 c Semisweet chocolate chips.

Dried banana chips; opt
Set oven @ 350ºF/175ºC.
In a large bowl, beat butter and sugar until crumbly.
Beat in egg, bananas and vanilla. In another large bowl,
whisk flour, baking soda and salt; gradually beat into
banana mixture. Stir in 1/2 cup chocolate chips.
Transfer to a greased 10" cast-iron or other ovenproof
skillet; sprinkle with remaining 1/2 cup chocolate
chips. If desired, top with dried banana chips. Bake
until a toothpick inserted in center comes out clean,
25-30 minutes. Cool in pan on a wire rack.
