    Title: Round Steak Stroganoff
    Categories: Beef, Vegetables, Mushrooms, Dairy, Pasta
    Yield: 8 servings

    1/2 c A-P flour
    1 ts Salt
    1 ts Paprika
    1/2 ts Pepper
    2 lb Boneless beef top round
    - steak; trimmed, in thin
    - strips
    3 tb Butter
    1 c Chopped onion
    1 cl Garlic; minced
    10 1/2 oz Can condensed beef broth;
    - undiluted
    1/2 ts Ground mustard
    3 tb Chili sauce
    1 lb Sliced fresh mushrooms
    2 c Sour cream
    Hot cooked noodles
    Minced fresh parsley

    In a shallow dish, combine the flour, salt, paprika and
    pepper. Add beef strips; turn (or toss) until well
    coated.

    In a large skillet, melt butter. Brown beef in batches.
    Remove and keep warm. Add onion and garlic to the pan;
    cook until tender. Add the broth, mustard, chili sauce
    and mushrooms; return beef to the skillet. Cover and
    cook until the meat is tender, about 1 hour.

    Just before serving, stir in sour cream. Heat through,
    but do not boil. Serve over noodles. Garnish with
    parsley.

    Title: Homemade Apple Cider Beef Stew
    Categories: Beef, Potatoes, Vegetables, Fruits, Herbs
    Yield: 8 servings

    2 lb Beef stew meat; in 1" cubes
    2 tb Canola oil
    3 c Apple cider or juice
    14 1/2 oz Can beef broth
    2 tb Cider vinegar
    1 1/2 ts Salt
    1/2 ts Dried thyme
    1/4 ts Pepper
    3 md Potatoes; peeled, diced
    4 md Carrots; in 3/4" pieces
    3 Celery ribs; in 3/4" pieces
    2 md Onions; in wedges
    1/4 c A-P flour
    1/4 c Water
    Fresh thyme sprigs; opt

    In a Dutch oven, brown beef on all sides in oil over
    medium-high heat; drain. Add the cider, broth, vinegar,
    salt, thyme and pepper; bring to a boil. Reduce heat;
    cover and simmer for 1 1/4 hours.

    Add the potatoes, carrots, celery and onions; return to
    a boil. Reduce heat; cover and simmer for 30-35 minutes
    or until beef and vegetables are tender.

    Combine flour and water until smooth; stir into stew.
    Bring to a boil; cook and stir for 2 minutes or until
    thickened. If desired, serve with fresh thyme.
