Title: Chipotle Guacamole

Yield: 30 servings
2 Ripe Hass avocados
2 ts Lime juice
1/4 ts Kosher salt
2 tb Cilantro, chopped
1/4 c Red onion, diced
1/2 Jalapeno, including seeds,
- diced
Cut the avocados in half using a sharp knife, remove the
pits and scoop the flesh into a large bowl. Toss the
avocado halves in lime juice and salt.
Using a fork (or potato masher), mash the mixture
together until smooth and only a few chunks of avocado
remain.
To the bowl of mashed avocado, toss in the remaining
ingredients and mix.
Taste and season the guac with additional salt and/or
lime juice, then serve as desired.
